Bonzos Meringue Powder / Egg White (Albumen) Powder 90g

Pasteurised spray dried egg albumen powder.

For small amounts of royal icing, perhaps if you just need enough to pipe a birthday message on a cake. We call this the COFFEE CUP METHOD

  • Fill a coffee mug 2/3 of icing sugar. 
  • Add a rounded teaspoonful of egg white powder. 
  • Mix powders together first in the mug and then add enough water to form double cream thick consistency.  Mixing is best done with a knife and then give it a good beat in the coffee cup until light and fluffy.
  • If a little stiff as little as 3 drops of water to improve consistancy for piping. Cover mug with a damp cloth while using to stop it drying out.

To stabilise BUTTERCREAM in HOT WEATHER add 1 table spoon to a batch - best mixing powders together prior to adding butter.
