Bonzos Gum Tragacanth 50g

Gum Tragacanth (gumtrag) is a natural product that adds strength and pliability to sugar products and is used similarly to CMC. 

Derived from the Astralagus Gummifer tree it can be added to modelling paste, flower paste and pastillage recipes where strength is essential. The addition of gum tragacanth allows you to roll out sugar pastes finely and helps models to hold their shape. 

For making flower or modelling paste: add one heaped teaspoon gum trag to 250g sugarpaste and knead well. 

For strengthening royal icing: take a small amount of gum trag on the end of a knife, add to a small cup of royal icing & mix well. Perfect for sticking decorations together or onto cakes.
