For small amounts of royal icing, perhaps if you just need enough to pipe a birthday message on a cake. We call this the COFFEE CUP METHOD
Fill a coffee mug 2/3 of icing sugar.
Add a rounded teaspoonful of egg white powder.
Mix powders together first in the mug and then add enough water to form double cream thick consistency. Mixing is best done with a knife and then give it a good beat in the coffee cup until light and fluffy.
If a little stiff as little as 3 drops of water to improve consistancy for piping. Cover mug with a damp cloth while using to stop it drying out.
To stabilise BUTTERCREAM in HOT WEATHER add 1 table spoon to a batch - best mixing powders together prior to adding butter.
Ingredients: Egg albumen from hen shell eggs, Foaming agent (E1505).
